Spring Cleaning Detox Salad

Along with the idea of Spring cleaning for our homes; why not embrace the idea of Spring cleaning for your mind, body, & soul as well? This salad is the perfect way for you to help your body hit the 'reset' button after a long Winter. Salad Ingredients:
1 head of kale (your preference), leaves sliced
1/2 red bell pepper, diced
2 carrots, peeled & grated thin
8 radishes, thinly sliced
1 avocado, peeled & diced
2 Persian cucumbers, thinly sliced
1/2 cup sliced almonds or walnuts
1/2 cup sweet potato, cooked & cubed

Dressing Ingredients:
1/4 cup avocado or olive oil
juice from 1 large lemon
1 clove garlic, minced
2 tsp maple syrup
2 tsp Dijon mustard
pinch of salt & pepper

Method:
Combine all salad ingredients into a bowl.
Place all salad dressing ingredients into a blender and blend to combine.
Pour completed dressing into bowl of salad ingredients- toss to cover veggies & green- enjoy!
