Pistachio Encrusted White Fish Filet

Here's a healthy dinner idea that is light on the belly, easy on the budget, and quick on the time clock. That's what you might call a triple threat! The healthy fats in the nuts and the fish work wonders for your skin, pair this meal with a nice side of veggies and quinoa for a well balanced meal. 

INGREDIENTS:
1/4 cup pistachios- finely ground
1/4 cup panko bread crumbs 
1/4 tsp salt & 1/4 tsp pepper 
1/8 tsp ground cumin 
1 TBS olive oil (or other cooking oil)
4 white fish filets
INSTRUCTIONS:
Preheat oven to 350 degrees
Blend pistachios, panko, salt, pepper, and cumin in a food processor until the nuts are a consistency you enjoy.
Place white fish filets on a sprayed baking sheet.
Drizzle each filet with olive oil before using your hands pat down the pistachio topping mixture on top. 
Bake 15 -18 minutes .
