Eat Well: Fall Nourish Bowl

We all know we're supposed to eat our veggies, but sometimes that's easier said than done. Our suggestion is to roast up a tray of veggies, cook up some lentils, and boil yourself some brown rice. Once all the prep work is done, you'll be able to craft yourself a delicious and nourishing bowl for lunches and dinners all week long. 

Ingredient Suggestions:
  • ¼ cup cooked lentils 
  • ¼ cup cooked brown rice
  • sprinkling of chia seeds
  • ½ tsp sesame seeds
  • 2 boiled eggs- halved 
  • 1 ripe avocado- sliced 
  • 1 cup roasted broccoli
  • ½ cup roasted sweet potato, cubed
  • ½ cup roasted carrots
  • 2 TBS olive oil
  • ½ tsp salt
  • juice of ½ lemon
