Skin Saviour Salad

There’s nothing quite like a well put together salad to nourish and energize our bodies. Properly crafted salads include great skin-friendly ingredients that will help you achieve that desired glow from the inside out. By choosing ingredients that are healthy and taste good together, you can create a salad you’ll start to crave!

Ingredients:
1 tin of chickpeas, rinsed
3 handfuls of spinach leaves
½ avocado, diced
1 zucchini, sliced into thin coins
Olive oil
2 TBS tahini
½ lemon, juiced
Water
Salt, garlic, black pepper- to taste

Instructions:

Brush the zucchini slices with olive oil and grill up on a grill pan (or skillet) for 2-4 minutes per side.

In a small bowl, mix together: tahini, garlic, lemon juice + 2 TBS of water (or enough to make a runny dressing) Add salt and pepper


In another bowl, place rinsed chickpeas and top with tahini dressing. Add spinach into serving bowls and top with the chickpeas, avocado, and grilled zucchini.
